Stuffed Scallops


Ingredients

  1. Fresh Maine Scallops

  2. Ritz Crackers

  3. Dry White Wine (Riesling preferred)

  4. Butter

  5. Finely Grated Parmesan Cheese

Directions

  1. Take ‘feet’ off of the scallops, pat dry with a paper towel

  2. Fill bottom of a pie plate with white wine

  3. Combine parmesan and crackers (adding salt & parsley if desired) in a plastic bag. Smashing the cracker mix with either a rolling pin or side of a tin can

  4. Place scallops on the wine, top with cracker mix, and place 5 tablespoons (pads) of butter on the top of the cracker mix

  5. Put pie plate into oven at 325℉ for 22-25 minutes

Bonus Ingredient

Add fresh Jonah Crab Meat to the cracker mix before baking for a wicked sweet twist!


 

Whole Roasted Chicken

Ingredients

  1. Whole Chicken (2.5 -3 lbs)

  2. Carrots

  3. Celery

  4. Butter

  5. Spices & Seasoning (rosemary, paprika, garlic, thyme, salt, pepper, cayenne, etc.)

Directions

  1. Clean cavity of the chicken, and place breast side up in a roasting pan

  2. Stuff cavity full with carrots, celery, and butter

  3. Rub the top with butter and then season with spices and herbs

  4. Place chicken in 425℉ oven for 50-65 minutes

  5. Let rest for at least 15 minutes

Bonus Ingredient

Add a local Maine beer to the base of the roasting pan. Save some to make a beer gravy for your meal!


 

Maine Lobster Bake


Ingredients

  1. Maine Lobsters (Still Alive)

  2. Potatoes

  3. Corn

  4. Salt

  5. Butter & Lemons

Directions

  1. Add potatoes to a pot of boiling water and sea salt.

  2. Once those have cooked off about â…” of the way, pour a small amount of the water out to make room for the lobsters.

  3. Add live lobsters, head/claws first. Close the lid and allow steam to form (lobsters typically cook about 7-10 minutes per pound)

  4. Add corn for the final 3 minutes. Close the lid.

  5. Melt butter and cut lemons for everything. Enjoy!

Bonus Ingredient

Add spicy Spanish Chorizo to your boil! It adds a depth of flavor and heat that your guests will love!

Apple Crumble

Ingredients

Apple Mix

  1. Hard-ish, sweet Apples (Gala, Pink Lady, or McIntosh are my faves)

  2. Golden Sugar

  3. Lemon Juice & Zest

  4. Cinnamon

  5. Maple Syrup

Crumble Mix

  1. Flour

  2. Butter

  3. Brown Sugar

  4. Vanilla

  5. Cinnamon

Directions

  1. Cut apples into thin slices

  2. Season & toss with golden sugar, cinnamon, lemon, zest, and maple syrup. Place mixture into a greased baking dish

  3. For crumble, combine equal parts flour, butter (soft but not melted), and brown sugar. Add a splash of vanilla, sprinkle of salt, and a dash of cinnamon

  4. Pat crumble down firmly, but not pressed (you want some butter and sugar clumps to maintain their form) on top of the apple mixture.

  5. Bake at 350℉ for 25 minutes or until the top is golden brown

Bonus Ingredient

Add homemade vanilla Whipped Cream for a beautiful crumble companion!


 

Peanut Butter Chocolate Balls


Ingredients

  1. Creamy Peanut Butter

  2. Chocolate Chips

  3. Confectioners Sugar

  4. Butter or Coconut Oil

  5. Heavy Cream

Directions

  1. Combine equal parts confectioners sugar and creamy peanut butter (with a wooden spoon or in a stand mixer). Add a dash of fine salt

  2. Put rolled peanut butter balls in the freezer

  3. While peanut butter balls harden, melt 5 parts chocolate chips, 2 parts fat, and a splash of cream.

  4. Microwave until mixture has melted together (it should be sort of a paste). Grab PB Balls out of the freezer.

  5. Pat chocolate into flat wrapper size patties (I wore gloves because the chocolate was hot), and wrap it around the PB Ball. Place in the fridge and enjoy!

Bonus Ingredient

Put one Rollo in the center of each peanut butter ball before wrapping in chocolate for an ooey-gooey surprise in the center.
